In Dragon’s Dogma for the PS3 and Xbox 360, just like most RPG’s these days, there is a New Game+ feature (aka NG+).
In order to start New Game+, you first need to beat the main story quest Fathom Deep, which is essentially the end of the story.
Once you beat the story, load your game again and you will be prompted to start New Game+.
You will keep your level, and items (in storage at the Inn), however mob difficulty does not increase at all.
You’ll also now be able to purchase Portcrystals from The Black Cat, and any portcrystals previously deployed will still be there. Y
Your explored map areas will still be marked as explored, and you’ll have access to some new quests with more gold rewards than usual.
As a bonus, you’ll also find a rift stone on the beach in Cassardis that takes you directly to the Ur-Dragon fight.
