There is a code available in Star Wars: The Force Unleashed for the PSP, Wii, and PS2 that allows you to play as Darth Maul.
1. While on board your ship between missions, select Extras > Enter Code.
2. Enter the code ZABRAK.
You will now be able to select the Sith character Darth Maul for your game.
