There is a Dual Wield cheat in Lego Star Wars 3: The Clone Wars for the PS3 and Xbox 360 that will let you wield two weapons at once.
To enable the Dual Wield, pause the game and select Extras, then Enter Code. Put in the code JX1V4N2 to enable the cheat.
