There are three unlockable courses in Dead or Alive 5 (DOA 5) for the PS3 and Xbox 360.

True Fighter Course – Complete the Champ course in Arcade, Time Attack, or Survival modes
Master Course – Complete the True Fighter course in Arcade, Time Attack, or Survival modes
Legend Course – Complete the Master course in Arcade, Time Attack, or Survival modes
